Things get a lot more unpredictable, and so having ready to eat food around is a must. I always make at least one soup on the weekend, which we can eat during the week. I also plan to precook a lot more stews in the fall. I also have some homemade frozen meals in the freezer.<br /><br />Your stuffed tomatoes sound great! We have been very lucky this yearm and our plants have produced tons of tomatoes. <br /><br />I make a very simple tomato soup (but I think some of the ingredients you can't eat). I start by sauteeing some onions, garlic, celery, and carrots. Then I add the tomatoes and some veggie stock and cook for about 20 minutes. Next I puree the soup with an immersion blender. Last time, I added about a cup of Greek yogurt.
