I never did that because I prefer counting calories, and two servings of olive oil takes away a lot of the calories I'd rather eat on a daily basis. When I attended an olive oil workshop over the summer we learned that most of what ends up in the US is not really the "good stuff". If the olives fall to the ground instead of being hand picked it is not a good thing, and it seems most of what falls to the ground ends up being cheaply sent off to make stuff that is exported. If you look, many products have a mix of olives harvested in multiple countries, so it is best to look for a product where all the olives are from the same farmer (are they farmers? I guess they are...). If you are interested in more about olive oil, check out this website. My friend Elena writes for them and is who I would most consider an expert on olive oil.
