You're absolutely right...they're cookies! I like experimenting with a mix of grains in my gluten-free baking. For a quick sub I use 1/2 sorghum flour plus 1/2 tapioca starch/potato starch. I've been experimenting a lot more with almond flour too. I usually use about 1/4 cup less gluten free white wings flour than is called for and sub in 1/3-1/2 cup of almond meal.
