Sweet Potatoes in Everything. Literally

There are two things in life that I believe taste good in or with just about anything. The first is nut butter (any kind; peanut, almond, cashew), and the second is sweet potato (or canned pumpkin, if I could ever find any!).

Just look at it. I mean, it's so ugly, right? Yet so good (and good for you)!


The other day Melissa mentioned that she'd been wanting to try the combination of almond butter and sweet potato. So of course I had to give it a try myself. I grabbed my new favorite almond butter; Blue Diamond Crunchy, and went to town.


Even cold, this combination was AMAZING!



The next morning I created this.....


I had been missing my pumpkin oats so Nick had the brilliant idea to add sweet potato to my oats! I knew I loved him for a reason (many reasons....). This combination is a MUST TRY! Oat bran, 1/2 skinless sweet potato, 1 T almond butter, 1/2 cup Organic plain yogurt, and 1/2 packet Truvia.

Sweet potato can also make a great thickening agent in a smoothie.


Yeah, the banana helps thicken as well, but the sweet potato ads a natural sweet taste, tons of beta carotene, and alpha carotene (both of which are cancer fighters, heart protectors, and quite possibly anti-aging nutrients), and fiber. Sorry Mr. Banana but you're not as amazing as the sweet potato (although I still love you).

After adding 1/2 cup frozen blueberries, 1/2 cup soy milk, and 1/4 cup juice, I blended this beauty and created this:

Do you know the difference between a sweet potato and a yam? According to the book "Why Does Popcorn Pop", by Don Voorhees, yams are more starchy and less sweet. You really can't find yams in America, unless you live in specific parts of Florida (where they are grown). They are also grown in Latin America. When you see "canned yams" at the store, they are really sweet potatoes. Tricky, eh?!

  3. I love sweet potatoes too- though I haven't tried the sweet potato/almond butter combo but I am sure I would love it. I'm surprised about the yam thing, why do the grocery stores keep marking things as yams lol? Get it right people!

    As for the canned pumpkin thing, I finally found some at whole foods last week. I'm not a huge fan of their organic canned pumpkin, not sure why its just not as good at Libbys- but they now have their own store brand and I couldn't tell the difference between that and Libbys which was good. I need to try sweet potato in my oats though, that sounds even better. I am a huge fan of sweet potatoes and butternut squash in my smoothies- with a bit of banana as well!

  4. I love sweet potatoes. I'll eat them left over and cold for breakfast all the time! I've also tried putting them in smoothies because of their natural sweetness. I use nut butters on enough other things, I'm not sure I want to start getting addicted to sweet potatoes and nut butter too, hah.

  6. Um, Gina. Why are you not in Asia? you should have been born here...we have an obsession for pumpkin and sweet potatos. Oh, the candied sweet potatoes in Korea...AWESOMe. They fry it in some kind of sticky syrup, and sprinkle black sesame seeds over. Crunchy, gooey, sticky, sweet, and smokey. SO good.

    Oh, and please do try the Asian sweet potatoes. They cannot be measured up the the orange ones. These taste really INTENSE. like roasted chestnuts.

  8. sweet potato = my super duper veggie. Love it with just about everything too!! Instead of oats in a jar I do sweet potato. Taste oh so delicious :) love the addition of nut butter!

  21. Hi G!!! I looove your idea of plopping sweet potato into the smoothie instead of banana. Nutrition-wise, is it a better bet to replace the banana with sweet potato then? (I assumed that since you said mr. banana, butt out...well, sorta!) hehehe

    I looove yams. I've actually had a TON of luck finding yams in Chicago. They're sold in my local safeway store as well as all the Asian grocery stores i've been to. It goes super duper in chili as a thickener!! YUM!

  27. Oh I love sweet potatoes!! I didn't even try them til a couple of years ago - I never had them as a kid. My favorite is with almond butter and vanilla yogurt. I haven't tried in a smoothie yet, but I've tried pumpkin and it was good, so I think sweet potato would be even better! How is it that something this delicious is so good for you?!

  31. I do know exactly the difference of yams and sweet potatoes. I don't live in Florida but I sometimes found yams in the local market. As the first time I search for all news about sweet potatoes, I knew then that almost all Americans believe that some sweet potatoes are yams. Thanks for sharing this post. I completely agree with you to the fact that we can do many things to sweet potatoes.
