Tempeh Salad with Dijon, Greek Yogurt and Nooch!

When I first saw Grace's recipe for "Tofu Eggless Salad" I was bummed because I really dislike tofu, but I loved the recipe. So I thought... I'll use tempeh! Right away I googled, "Can you eat raw tempeh?!". I knew the answer had to be yes, because after all it is a vegetable (a bean, to be precise) but I wasn't sure if it was normal to eat it raw. I soon found that while it may not be the norm to eat raw tempeh, it's been done before and it's not too strange. That's how this recipe came to fruition.

Tempeh Salad With Dijon, Greek Yogurt, and Nooch!
Adapted from Grace's Tofu Eggless Salad

Serves 4-5

8 ounces tempeh
1/2 cup plain Greek Yogurt (or vegan mayo)
1 large carrot, chopped
1 stalk celery, finely chopped
1/4 cup olives (I used green)
3 Tbsp. parsley
2 Tbsp. nutritional yeast
2 Tbsp. dijon mustard
1/2 tsp. turmeric
1/4 tsp. smoked paprika
1/4 tsp. cayenne pepper
Pepper to taste

Chop the tempeh into small chunks (~1/4 inch) and add to a medium bowl. Add the remaining ingredients and mix until well-incorporated. Scoop onto your favorite bread, serve and enjoy!

Once I made this, I couldn't stop eating it. I grabbed one of our giant forks from the drawer (the fork I typically use for large salads or to serve large meats) and I dug in. HA! NOTE: I actually grated my carrots into strips, but I would recommend shopping them to make this easier to eat.

I packed this in my lunch for a couple days, without any bread. I enjoyed every bite. And of course it tasted amazing on an English Muffin.

    I prefer tofu (when prepared well), but I like tempeh a lot too. And green olives for sure! Really...I just love the good, marinated olives of any sort.

  4. It looks wonderful, but I'll admit that I'm freaked out by all soy products. If I had to choose one, it would be tempeh....but I'd probably just do this with eggs!

  5. Glad you enjoyed this! I could also see browning the tempeh in a little oil first and then using it here. Love the idea of using tempeh though!

  8. Yum! This looks awesome! I like both tofu and tempeh, and I would say I like tofu more, but I think it really comes down to the dish. As for olives. I love all olives! I will say black olives over green, but it is very, very close. I am headed to Israel and Spain soon, and I can't wait to get my hands on some olives!

  9. Sounds interesting! I still haven't tried tempeh (someone once described its taste and smell to me in a really unappealing way, and I just can't get it out of my mind...). I do like tofu (and I will try tempeh one day)... I used to seriously dislike olives when I was younger, but now I like them a lot. I don't think I have a favorite - it depends on my mood...

  11. I'm one of those tofu fans, but this is so interesting and looks delicious I'll have to give it a try with tempeh.

  12. Tofu for me, maybe because it's cheaper and easier to prepare.
    I don't like olives in general, but when it's added into a recipe, I prefer green.
    The salad looks fantastic, I think I'll just eat it plain. :)

  13. Very tempting to taste. Tofu are great replacement for meat as it contains the same protein we need.
