Vegetarian Slow Cooker Cookbook Giveaway!



I love my slow cooker.  Love it.  I also really love vegetarian foods. However.....vegetarian foods don't always love me.  I received this book; The Gourmet Vegetarian Slow Cooker, from my mother in law as a Christmas gift, but as I went through the pages I realized, as I had feared, I wouldn't be able to enjoy most of the recipes because they contained FODMAPs ( my mother in law, Dee, also got me a non-vegetarian slow cooker cookbook, which I plan to use very soon, and often).  I am able to modify a lot of my favorite recipes to contain less FODMAPs  but most vegetarian recipes have FODMAP ingredients as their core ingredient, and for the main source of protein, therefore they are more difficult to modify.



I thought about returning the book, but then I thought NO WAY! I want one of my loyal readers to get this book!  I mean, it's a wonderful cookbook, with some fantastic recipes from all around the world.

  1. I love my slow cooker and am looking for more recipes! The book sounds great!

    Currently, I love lentils as a vegetarian source of protein. I made a very simple lentil soup/stew in my slow cooker when my parents were visiting, and we all loved it.

  3. I love my slow cooker but have found few vegetarian options other than soups/stews. My fav source of protein is beans, any kind of beans.

  6. I love all kinds of beans, but black and great northern are my absolute favorites! In high school, my after-school snack was always great northern beans with vinegar and onions on plain triscuits--yum!

  8. I dont have a slow cooker but have heard great things and plan to get one in the near future so this book would be perfect! My fave source of protein would be black beans!!! I love them. I also found a new way to make them with curry powder and they are just delicious. I was also going to say Avocado but cant remember if its high on protein :)

  9. My favorite vegetarian protein source is a toss up between black beans and lentils. I had never had lentils prior to doing Meatless May last year, and now I eat them at least 3x/month!

    And I also love using my slow cooker! I'm glad you got 2 new cookbooks, and so nice of you to give one away!

  18. I'm on the bean bandwagon! Wish I could like tofu more - definitely depends on the preparation. I would love to use my slow cooker more but other than soups I don't have any recipes that don't include red meat, pork or poultry so I'm going to have to look for this book.

    1. I love tempeh too. It's my favorite, but I can't eat it without eating a stomachache. Ugh.

  32. What a great cookbook - it's too bad you can't use it. My fave veggie protein is probably nuts/nut butters. I always have multiple jars of nut butters and lots of nuts in my pantry.
