Just look at it. I mean, it's so ugly, right? Yet so good (and good for you)!
The other day Melissa mentioned that she'd been wanting to try the combination of almond butter and sweet potato. So of course I had to give it a try myself. I grabbed my new favorite almond butter; Blue Diamond Crunchy, and went to town.
The next morning I created this.....
I had been missing my pumpkin oats so Nick had the brilliant idea to add sweet potato to my oats! I knew I loved him for a reason (many reasons....). This combination is a MUST TRY! Oat bran, 1/2 skinless sweet potato, 1 T almond butter, 1/2 cup Organic plain yogurt, and 1/2 packet Truvia.
Sweet potato can also make a great thickening agent in a smoothie.
Yeah, the banana helps thicken as well, but the sweet potato ads a natural sweet taste, tons of beta carotene, and alpha carotene (both of which are cancer fighters, heart protectors, and quite possibly anti-aging nutrients), and fiber. Sorry Mr. Banana but you're not as amazing as the sweet potato (although I still love you).
After adding 1/2 cup frozen blueberries, 1/2 cup soy milk, and 1/4 cup juice, I blended this beauty and created this:

Today's Trivia
Do you know the difference between a sweet potato and a yam? According to the book "Why Does Popcorn Pop", by Don Voorhees, yams are more starchy and less sweet. You really can't find yams in America, unless you live in specific parts of Florida (where they are grown). They are also grown in Latin America. When you see "canned yams" at the store, they are really sweet potatoes. Tricky, eh?!
Coming Up
Tomorrow I will be posting a new recipe, brought to you by my mother and the Columbus Dispatch! It's a keeper. Happy Memorial Day everyone! Enjoy your day off :)
Sweet potatoes are pretty much my favorite food! I think they are the best with peanut butter though :-)
ReplyDeleteHey, don't underestimate my beloved bananas! :D Mmmm sweet potatoes ARE really awesome though.
ReplyDeleteVoorhees' book sounds great; I'd never heard of it. I'm going to see if I can find a copy!
I love sweet potatoes too- though I haven't tried the sweet potato/almond butter combo but I am sure I would love it. I'm surprised about the yam thing, why do the grocery stores keep marking things as yams lol? Get it right people!
ReplyDeleteAs for the canned pumpkin thing, I finally found some at whole foods last week. I'm not a huge fan of their organic canned pumpkin, not sure why its just not as good at Libbys- but they now have their own store brand and I couldn't tell the difference between that and Libbys which was good. I need to try sweet potato in my oats though, that sounds even better. I am a huge fan of sweet potatoes and butternut squash in my smoothies- with a bit of banana as well!
I love sweet potatoes. I'll eat them left over and cold for breakfast all the time! I've also tried putting them in smoothies because of their natural sweetness. I use nut butters on enough other things, I'm not sure I want to start getting addicted to sweet potatoes and nut butter too, hah.
ReplyDeleteI like sweet potatoes, too. Fun creations! I'll have to try them in a smoothie...
ReplyDeleteHave great day! :)
Um, Gina. Why are you not in Asia? you should have been born here...we have an obsession for pumpkin and sweet potatos. Oh, the candied sweet potatoes in Korea...AWESOMe. They fry it in some kind of sticky syrup, and sprinkle black sesame seeds over. Crunchy, gooey, sticky, sweet, and smokey. SO good.
ReplyDeleteOh, and please do try the Asian sweet potatoes. They cannot be measured up the the orange ones. These taste really INTENSE. like roasted chestnuts.
Mmm I had sweet potato fries last night! Although I just confess lately I've been opting for the white potato in most instances.
ReplyDeletesweet potato = my super duper veggie. Love it with just about everything too!! Instead of oats in a jar I do sweet potato. Taste oh so delicious :) love the addition of nut butter!
ReplyDeleteThat sweet potato/yam thing always tricks me! Glad to have the definitive answer :-)
ReplyDeleteSweet potatoes are definitely one of my all-time favorite foods.

I love sweet potatoes. They have one here on the island, but it is not orange, but it is darn sweet. What a great idea to put it in the oats.

ReplyDeleteWait. Why DOES popcorn pop? That sounds like a book I would love...nerd alert! I LOVE LOVE sweet potatoes....it's probably a good thing the boy does not or we'd eat it all the time!
ReplyDeleteLove this post! It's so true- sweet potatoes, though they aren't the most attractive thing to look at, are just so darn delicious! I love all the ways you used the superfood, too! Hope you're having a fantastic Memorial Day weekend!
ReplyDeleteI just ate a sweet potato biscuit. They're such a treat. I haven't found any pumpkin lately either. :(
ReplyDeleteoh I've never thought to try it with almond butter but I'm sure it's delicious!
ReplyDeleteHi G!!! I looove your idea of plopping sweet potato into the smoothie instead of banana. Nutrition-wise, is it a better bet to replace the banana with sweet potato then? (I assumed that since you said mr. banana, butt out...well, sorta!) hehehe
ReplyDeleteI looove yams. I've actually had a TON of luck finding yams in Chicago. They're sold in my local safeway store as well as all the Asian grocery stores i've been to. It goes super duper in chili as a thickener!! YUM!
Wow!! You (and Nick!) are creative with those sweet taters! I love the oats idea, that's great! I almost forgot about the pumpkin shortage until I was talking about it with my in-laws this weekend :)
ReplyDeleteI will select sweet potatoes without even thinking if given a choice between S potato and pumpkin. That is a great oats idea~
ReplyDeleteSweet potatoes and peanut butter? You are my hero!!!
ReplyDeletelove sweet potatoes-these recipes look great! i have yet to try the almond butter or peanut butter on them-i want too!
ReplyDeleteWhat a great idea to add sweet potatoes to smoothies! Gonna try that soon!
ReplyDeleteOh I love sweet potatoes!! I didn't even try them til a couple of years ago - I never had them as a kid. My favorite is with almond butter and vanilla yogurt. I haven't tried in a smoothie yet, but I've tried pumpkin and it was good, so I think sweet potato would be even better! How is it that something this delicious is so good for you?!
ReplyDeleteI think my top one celeb babe is Kim Kardashian What do you people think of her? The girl is extremely unusual to me.
ReplyDeleteLoving www.candidrd.com by the way, coolest webpage I've located in a long time. Any one know the place I can obtain extra photographs of her?
This became exactly what I used to be looking for! THANK YOU VERY MUCH!
ReplyDeleteThis is a fantastic piece of content. I truly do take pleasure in the outstanding job created by everyone
ReplyDeleteI do know exactly the difference of yams and sweet potatoes. I don't live in Florida but I sometimes found yams in the local market. As the first time I search for all news about sweet potatoes, I knew then that almost all Americans believe that some sweet potatoes are yams. Thanks for sharing this post. I completely agree with you to the fact that we can do many things to sweet potatoes.
