Veggies, Veggies, Everywhere!

I thought I was the person in the house who was most excited about having a garden, but I thought wrong. Nick has become the "garden guru" and I swear he's spent more money on our garden than he has on anything, ever, in his life. When I came home from Pittsburgh I was happy to see he had purchased a compost bin (I think this was money well spent).


He also moved our water bucket closer to our garden. When it rains the water will go through the gutters and drop into the bucket, which will then be used by us to water our garden! The compost will be used for fertilizer the next time we plant a round of seeds.


Check out our pumpkin and squash plants! They are taking over the entire garden.



Who needs canned pumpkin when you can grow your own?
Hmmm...actually I DO! While this little guy (below) really excites me, and I can't wait to puree it and add it to my oats, I still miss Libby's canned pumpkin :(


Nick has estimated that we will be producing over 50 squash. Some are yellow squash.


And some are acorn squash (our favorite!).


I saw a commercial for V8 juice the other day, which claimed "Drink one serving of V8 for three servings of vegetables!" Why would I drink V8 for three servings of veggies when I can enjoy them fresh and whole from the market or my garden?! Not to mention the fact that V8 is FIBER FREE.

This kale is from our garden. I added it to the skillet with some EVOO and roasted tomatoes.


Final product, over some egg whites, and sprinkled with some nutritional yeast. Perfect.

  1. Ooh, it's too hard to pick! Brussels sprouts are a favorite of mine...but I love all the winter squashes too!

    So cute that Nick is getting so into your garden project! Good for him!

  2. So cool you have a garden now and love that Nick loves it too! How cool your going to have pumpkins!!!!!!! Ahhhhhhhhhh yummy pumkin eats will be made from that! I miss Libbys can pumpkin too, I hope it comes back this year!

    My fave veggie is fresh cucumber from a garden! I love my brocolli too!!!

  3. Your garden looks great! I'm jealous! It is too hard to pick a favorite veggie, but I'm a winter squash and pumpkin lover in the fall!

  4. Isn't gardening exciting!? I love the rain bucket idea. We just made one of those for our family garden and it works great. We also have a compost pit, which took me hours and hours to dig...talk about a great workout! Those are the kind of workouts I like though, the ones that actually do something productive and good for the environment!

    It's hard to pick a favorite veggie...I'd use to say green beans without thinking twice, but I really love them all.

  5. I am super jealous that you have a garden! I live in an apartment complex so I don't have a yard.

    My favorite veggie is broccoli. But I like pretty much every veggie and eat tons of them.

  14. Gina! Your garden is beautiful. Mike is also into all the gardening at our house and I love coming outside and just picking some fresh produce.

    Hmm...I think a fresh tomato that smells like a real tomato is my favorite veggie...although it's really a fruit, right?

  16. Beautiful garden. That's high on my list for when we buy a house. I love composting too. When I was a kid, my parents used to compost and fertilize our garden with the soil produced from it.

  18. Your garden is coming along so beautifully! How do you plan on harvesting and storing your bounty when autumn finally hits? I love to make my own tomato/veggie sauces and store it in jars (I think it's called canning, but I may be wrong).

    My favorite veggie is probably beans - all types of beans!

  19. I'd plant corns and kabocha. I have to talk to Star, maybe he'll be willing to take care of the garden in the future, sounds like a lot of fun having your own garden. :)

  23. I don't know if I have ONE favorite vegetable. I love tomatoes (a fruit I know), spaghetti squash, brussels sprouts, asparagus, PEAS...the list goes on and on.

    So jealous of your garden and composter. I would love to compost but sadly I live in an apartment and my husband won't let me do it in the guest room.

  25. Just found your blog via The Health Nut; love it! I was wondering if you eat the squash blossoms- I get some from my CSA; had no idea before that these were food! I sautee them and put them in omelettes, they're great :)

  26. I love your garden! So cool that you are growing your own pumpkins and squash!

    My favorite vegetables would be bell peppers (which I used to hate!), zucchini (the best on grilled veggie sandwiches), cucumbers, and broccoli (but it has to be cooked broccoli - I don't like raw broccoli). Oh, and spinach - I love sauteed spinach!
