Thrifty Thursday: Make Pumpkin Butter, Give It As a Gift!

The holidays are here, and it's time to start thinking about gifts.  Not about gifts for you, but gifts that you will be giving to others!  Last year I gave out several jars of pumpkin butter with fresh loaves of whole grain bread.  I think it was a real hit, so I'll share the recipe with you for today's "Thrifty Thursday" post (because everyone has gifts to give this holiday season, and it's always thrifty to make your own gifts!).






 Pumpkin Butter

Makes ~ 32 servings
(1 T is a serving)

2 cups pumpkin puree, 1/2 cup honey, 2 T apple cider vinegar, 2 T cinnamon, 1 T pumpkin spice, 1/2 t nutmeg, 1/4 t salt. 


MIX TOGETHER!

Any fun plans for the day, or the weekend?  Today at work I am doing a vegetarian demo with the chef from our local Cancer Support Community.  We're making goat cheese stuffed eggplant, and zucchini fries.  I'll be making apple confit in the slow cooker this morning, to hand out for dessert.  Fun times.

  4. Yum! I would like to try to make this pumpkin butter. Do you have any ideas of what to eat this with if I wanted to make it into a sandwich/meal?

    1. I would say bread and peanut butter, or add it to oatmeal, or use it as a condiment on a turkey sandwich!
